Pepparkakar (Swedish Ginger Cookies)


My mother-in-law was Swedish. Her father came to America in 1910. He settled in Chicago and together his wife and him owned and operated a Swedish bakery. My mother in law worked in the bakery until the depression. I was blessed to acquire some of the original recipes from her before she died.






Pepparkakar (Swedish Ginger Cookies)

1 cup butter
1 1/2 c sugar
1 TBSP syrup or molasses
2 tsp soda
2 egg yolks
3 1/4 c flour
1 TBSP cinnamon
1 TBSP ginger
1 TBSP cloves
juice and rind of 1 orange

Sift flour with baking soda and spices. Cream butter with sugar; add syrup or molasses and egg; add dry ingredients and mix until blended. Turn on lightly floured board. Cut into desired shapes. Bake in 425 degree oven until brown.
