Rice Bowls

only thing left is the taco meat. Now what?
 It's all about the LEFTOVERS!!!


This particular recipe is so simple. My family loves Taco's. I usually make it with 2 lbs of ground beef because 1 pound is never enough and 2 lbs is too much and we have leftovers. Leftovers are not a bad thing, if you use creativity.

I've thrown the leftover Taco meat in everything - a enchilada casserole, chili, and now my Cheap Burrito Bowls.

You can do this individually or just toss it all in a big bowl and scoop it out from there.

You will need:

Leftover Taco Meat (could be chicken, shredded beef, pork etc)
1 can of pinto beans (or fresh)
leftover Rice (or seasoned Mexican rice)
pepper-jack cheese
cheddar
sliced olives
sliced green onions
tomatoes
shredded lettuce
avocado

On the rice, I added the seasoned taco meat, the pinto beans, sliced olives, and pepper-jack cheese.

I nuked (microwaved) the bowl to melt the cheese.

Then I added shredded lettuce, onion, tomatoes and avocado.

Pass around your extra Taco Bell sauce packets and enjoy!
