Very simple - not fancy. The way my Mom made potato soup.
- a bunch of potatoes peeled and cut up- 2 -3 lbs (remember I don't measure anything)
- water to cover the potatoes
- 1 onion
- garlic powder (optional)
- whole milk but any milk can be used.
- butter or margarine
In a med-large pot add the cut up potatoes, onions, seasonings and water - that should only cover the potatoes. Boil and cool till tender. Remove from heat and mash with a potato masher. Don't use an electric mixer - makes it turn out all mushy like mashed potatoes (but you can, if you like that consistency) Add milk, butter and place back on burner and heat again. Add butter or margarine. If you like it thinner, add more milk or water or use a non-fat milk.
bacon bits and chopped green onions
shredder cheese (I like pepper-jack)
frozen corn - for Corn Chowder
Broccoli for Potato Broccoli Soup.
Use cream instead of milk
to save on fat use non-fat half and half -
chicken or veggie broth for the water
