Cheap whole wheat banana bread with flax seed meal

hehehehe, if I didn't know better, I'd think this is a meatloaf!

You can eat healthy even if you are using a lot of food bank supplies.  Sometimes you'll get like 3 ripe bananas and you think, 

"Why can't they give us some good "eatin" bananas" - 

- Well that's because they probably want you to bake some banana bread.  So why not make a breakfast bread like my simple and cheap version of banana bread? You can slice it up, top it with some butter (food bank) or some cream cheese. You could toast it and use it like cereal. Just crumble it up and add milk. Better for you than any expensive store bought cereal.

Cheap Whole Wheat Banana Bread with Flax Seed meal  

Preheat oven to 350

Get out your bread pan - you could probably bake this also into a flat square baking pan - just play with it - same temperature, just a different cooking time. You do know, you have to grease the pan....

By memory it is:

1 cup of whole wheat

3/4 cup of white flour
3/4 cup of flax seed meal
2 eggs
1/3 cup of oil *
3/4 cup of sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
3 very ripe bananas

Assemble the wet ingredients and the dry ingredients and then add the wet to the dry. Mix by hand.  It will be stiff.  

Spoon it in the loaf pan - add the topping and press it down, on top of the bread. 

Bake at 350 for about 55-60 minutes


1/2 chopped walnuts

1/2 tsp cinnamon
1/4 cup of brown sugar

* if you don't want the fat you can always use the applesauce instead. I haven't but give it a try and then let me know how it was! 

This is not a sweet bread - the topping is what gives the sweetness and its crunchy and good.
