Jan is National Soup Month

I love soup. I can make a big pot of soup and I can feed my family for 1 night (6 adults) and can squeeze out a couple of lunches for my husband and I the next day. But for a young family or a single person, it can feed you for a week. Or you can freeze part of it for later.

I only have soup and chili - 6 months out of the year. It gets too HOT here in the summer and soup just doesn't do it for me. So I love this time of year.

Soup can be simple or you can make a big production out of it, if you are so inclined. If you have too many food-bank canned vegetables - make a soup, add some of the pasta or a potato - rice. Make a salad, some cornbread muffins or bread and you have a nice hot meal for a cold winter evening.

If you are blessed to have fresh vegetables, then by all means, SOUP them. Frozen is good too. Just don't let the food police make you feel bad, that all you can afford at this time, are canned.

A sack of potatoes don't cost that much.
